About this recipe

A parfait is breakfast that feels like dessert. Thick, protein-rich Greek yogurt, juicy berries and a crunchy honey granola make a balanced start to the day — and it looks beautiful layered in a glass.

Method

  1. Make the granolaHeat the oven to 160°C (325°F). Toss oats, almonds, seeds, honey, coconut oil, cinnamon and salt. Spread on a lined tray.

  2. BakeBake 18–20 minutes, stirring once, until golden. Cool completely — it crisps as it cools.

  3. Flavor the yogurtStir the vanilla into the yogurt. Sweeten with a little honey if you like.

  4. LayerIn glasses or jars, layer yogurt, berries and granola, repeating twice.

  5. ServeFinish with a final handful of berries and a drizzle of honey. Serve immediately for maximum crunch.

💡 Tips for success

  • Add granola just before eating if packing for later.
  • Frozen berries work — thaw and use the juices as a sauce.
  • Choose unsweetened yogurt to control added sugar.

🧊 Storage & leftovers

Granola keeps 2 weeks in an airtight jar. Assembled parfaits are best within a few hours.
