Crispy edges, a buttery center and a sweet-savory glaze that caramelizes in the pan — this salmon delivers big flavor on a busy weeknight. Serve it with rice and greens and dinner is done in about 20 minutes.
Season the fishPat the salmon dry with paper towels and season both sides with salt and pepper.
Mix the glazeStir together the honey, soy sauce and lemon juice in a small bowl.
SearHeat the oil in a large skillet over medium-high heat. Add the salmon skin-side down and cook 4–5 minutes without moving until the skin is crisp.
Flip and add aromaticsTurn the fillets, reduce the heat to medium and add the butter and garlic. Cook for 1 minute until fragrant.
GlazePour in the honey mixture and simmer 2–3 minutes, spooning the sauce over the fish until it thickens and coats. The salmon is ready when it flakes easily and reaches 52–60°C (125–140°F) inside.
Garnish and serveSprinkle with spring onion and sesame seeds and serve with the pan sauce.
