Shoyu Ramen with Jammy Eggs
A savory soy-based broth, springy noodles and marinated soft-boiled eggs — homemade ramen in under an hour.
Smoky, savory fried rice packed with vegetables and scrambled egg. The best way to use leftover rice.
The key to great fried rice is day-old rice and a very hot pan. Cold rice grains stay separate and toast beautifully, picking up that coveted smoky flavor. Load it with vegetables, finish with soy and sesame, and you have dinner in 15 minutes.
Prep everything firstFried rice moves fast, so chop all your vegetables and break up any clumps of rice before you start.
Scramble the eggsHeat 1 tsp oil in a wok over high heat. Add the eggs, scramble until just set, then remove to a plate.
Stir-fry aromatics and vegAdd the remaining oil, then garlic, ginger and the white parts of the spring onions for 30 seconds. Add carrot and pepper and stir-fry 2 minutes.
Fry the riceAdd the rice, spreading it across the pan. Let it sit 1 minute to toast, then toss. Repeat for 3–4 minutes.
SeasonAdd peas, soy sauce and oyster sauce, tossing until evenly colored and hot.
FinishFold in the eggs, sesame oil and green spring onions. Serve immediately.
Cool quickly and refrigerate within an hour of cooking. Keeps 2–3 days; reheat until steaming hot.
